RECIPE OF THE MONTH
Tropical Cucumber Salad

Here's a great salad that's re-
freshing, healthy, and easy to
prepare. Recipe courtesy of:

INGREDIENTS:

2 tablespoons lime juice
1/4 cup chopped fresh cilantro
1 teaspoon rice vinegar
1 avocado, cut into 3/4-inch dice
1 tablespoon canola oil
2 teaspoons light brown sugar
1/4 teaspoon crushed red pepper
1 teaspoon freshly grated lime zest, plus more for garnish
1 medium English cucumber, cut into 3/4-inch dice
1 mango, cut into 3/4-inch dice (see Kitchen Tip)
1-3 teaspoons fish sauce (see Shopping Tip)

DIRECTIONS:

Combine cucumber, avocado and mango with a salty-sweet
dressing for a taste of the tropics.

Whisk fish sauce to taste, lime zest, lime juice, oil, brown
sugar, vinegar and crushed red pepper in a large bowl until
combined. Add cucumber, avocado, mango and cilantro;
gently toss to coat. Serve garnished with lime zest, if
desired.

Fish sauce is a pungent Southeast Asian condiment; find it
in large supermarkets and Asian markets. To peel and cut a
mango: 1. Slice both ends off the mango, revealing the long,
slender seed inside. Set the fruit upright on a work surface
and remove the skin with a sharp knife. 2. With the seed
perpendicular to you, slice the fruit from both sides of the
seed, yielding two large pieces. 3. Turn the seed parallel to
you and slice the two smaller pieces of fruit from each side.
4. Cut the fruit into the desired shape.

you're prepared if a storm strikes.The American Red Cross sug-
gests the following steps to protect yourself and your family:

Prepare a Home Tornado Plan

• Pick a place where family members can gather if a tornado is
headed your way. It can be your basement or, if there is no
basement, a center hallway, bathroom, or closet on the lowest
floor.

Assemble a Disaster Supplies Kit Containing

• First aid kit and essential medications.
• Canned food and can opener.
• At least three gallons of water per person.
• Protective clothing, bedding, or sleeping bags.
• Battery-powered radio, flashlight, and extra batteries.
• Special items for infant, elderly, or disabled family members.
• Written instructions on how to turn off electricity, gas, and
water if authorities advise you to do so.

• Listen to your local radio & TV stations for updated information.
• Know what a tornado
WATCH and WARNING means:
- A tornado
WATCH means a tornado is possible in your area.
- A tornado
WARNING means a tornado has been sighted and
may be headed for your area. Go to safety immediately.

When a Tornado
WATCH Is Issued...

• Listen to local radio & TV stations for further updates.
• Be alert to changing weather conditions. Blowing debris or the
sound of an approaching tornado may alert you. Many people say
it sounds like a freight train.

When a Tornado
WARNING Is Issued...

• If you are inside, go to the safe place you picked to protect your-
self from glass and other flying objects. The tornado may be
approaching your area.
• If you are outside, hurry to the basement of a nearby sturdy build-
ing or lie flat in a ditch or low-lying area.
• If you are in a car or mobile home, get out immediately and head
for safety (as above).

After the Tornado Passes...

• Watch out for fallen power lines and stay out of damaged areas.
• Listen to the radio for information and instructions.
• Use a flashlight to inspect your home for damage.
• Do not use candles at any time - in case of gas leaks.
